VINIFICATION
Manual harvest into small boxes. Manual selection of the clusters on the sorting table. Complete stalk removal followed by gentle crushing. Pressing. Cold static decantation for 48 hours. Co-fermentation: Cement vats with temperature control between 15ºC and 20ºC.
GRAPES VARIETIES
Encruzado, Malvasia Fina, Cerceal, Bical, Verdelho.
MATURATION
Aging on fine lees with regular batonnage until mid-May.

Its personality and complexity results from the climatic conditions, the selection of the best estate grapes and the creativity of our winemaker. Soils are granite dominated sands. Between elevation and river driven humidity, Dao’s wide diurnal temperature shifts (20º+) ensure both white and red wines are endowed ample natural acidity. Dao wines are renowned throughout Portugal for their “freshness”. Average age of vines: 15 years.
