VINIFICATION
Manual harvest into small boxes. Manual selection of the clusters on the sorting table. Complete stalk removal followed by gentle crushing. Pressing. Cold static decantation for 24 hours. Co-fermentation: Cement vats with temperature control between 15ºC and 20ºC.
GRAPES VARIETIES
Encruzado, Malvasia Fina, Cerceal, Bical, Verdelho.
MATURATION
Aging on ne lees with regular batonnage until mid-May.

A wine with a contemporary style, having an elegant and intense pro le. The wines show the character of the selected vineyard parcels on the Estate. Soils are granite dominated sands. Between elevation and river driven humidity, Dao’s wide diurnal temperature shifts (20º+) ensure both white and red wines are endowed ample natural acidity. Dao wines are renowned throughout Portugal for their “freshness”. Average age of vines: 9 years.
